New to breeding great danes need help?

I don't really know anything right now so any info is great. I want to do it right. I have an akc female the breeder I got her from said her grandfather is a german champion.. I know to wait till the 3rd time she comes in heat so I don't stunt her growth, I need an std and genetic test on her but that's it, I have a huge yard I don't want them cooped up and mistreated I have most of the day to spend with them. But what are the steps?? What's the best dog food?? Dog shows, and how do I know if she is a champion or her stud??
